psg calciomercato 150-Calorie Mac and Cheese | GLOW

This creamy, sun-dried tomato mac and cheese is only 150 calories per serving. Prepare to get addicted.

Ingredients

2 cups elbow macaroni
4 oz herbed goat cheese
2 oz sun-dried tomatoes, julienned
1 cup riced cauliflower
¼ cup raw cashews
2 tablespoons + 1 teaspoon tapioca starch
3 teaspoons extra virgin olive oil
2 cloves of garlic, medium
1 ½ teaspoon salt
½ teaspoon black pepper
1 teaspoon lemon juice
3 tablespoons breadcrumbs
3 tablespoons nutritional yeast
¼ cup chopped basil, packed cup

Equipment

High speed blender
9 inch Skillet
2.5 quart saucepan
4 quart pot
10x7 casserole dish

Directions

Soak cashews in 2 cups of boiling water for 1 hour.

After one hour, preheat the oven to 350 degrees. Fill your 4 quart pot with water and bring to a boil.

Add 1 packed cup of riced cauliflower and one cup of water to your skillet with ½ teaspoon of salt and cover. Cook on medium low until cauliflower is soft.

While cauliflower is cooking, drain your cashews and place them into the blender along with 1 cup of hot water, tapioca starch, 1 teaspoon olive oil, 1 garlic clove, 1 teaspoon salt, and lemon juice. Blend on high for one minute, stop the blender, scrape down the sides and blend again on high until the mixture is smooth. Pour mixture into your 2.5 quart saucepan and cook on medium low, constantly stirring. The mixture will first look curdled then turn into a smooth, creamy, and stretchy cheese-like mixture, turn off the heat.

Add a handful of salt into the pot of boiling water and add your macaroni. Cook for 6 minutes.

While pasta is cooking make the topping. Add remaining 2 teaspoons of olive oil, 1 tablespoon nutritional yeast and 3 tablespoons of breadcrumbs to your skillet, cook on medium low heat until everything has come together and is slightly toasted. Turn off the heat.

Empty the cauliflower and water into the blender and add the other garlic clove and ½ teaspoon black pepper. Blend on high, until it is smooth and puréed. Pour the cauliflower puree, goat cheese, and 2 tablespoons of the nutritional yeast into the saucepan with the cashew mixture. Cook on low heat until you have smooth and creamy texture.

One minute before the pasta is done add the sun-dried tomatoes to the pasta water and boil for 1 minute.

Drain pasta and sun-dried tomatoes, reserving ¼ cup of the cooking liquid. Add the pasta to the cheese mixture and stir. Stir in the ¼ cup cooking liquid and basil. Transfer to a 10x7 casserole dish. Top with the breadcrumb topping and bake for 7 minutes. YUM!
